Microgreens are young plants with just the first cotyledon leaf. They're typically between 8 and 16 days old and are harvested above the root leaving just the stem and cotyledon leaves for consumption.
Microgreens grow very quickly; some varieties can be ready to harvest within 7-10 days after planting. Microgreens can be found in grocery stores, farmers markets, restaurants and even your own home garden.
Microgreens make a great additions to salads and sandwiches. They are also delicious in soups and stews.
They are 4 to 40 times more nutritious than it's mature vegetable counterpart and provide essential nutrients such as vitamins A and C as well as iron and calcium.
